Cabbage 'Brunswick'
Brassica oleracea
Cold-hardy, reliable cabbage that stores exceptionally well! This German heirloom was introduced in 1924 and is known for making excellent sauerkraut. In one of my early gardens, I planted this variety next to a hybrid Chinese cabbage, and while the bugs demolished my Chinese cabbage, Brunswick was unfazed. It was a lightbulb moment for me–heirloom varieties have stood the test of time for a reason. I've grown it ever since!

How to Grow
Sow indoors 4–6 weeks before transplanting out. If possible, keep soil temperature over 75°F. Once germinated, reduce air temperature to about 60°F. Cabbage prefers cool temperatures, 55–75°F, but will produce a good crop in warmer conditions.
Harvest
Harvest heads while still relatively young. Ideal storage conditions are 32°F at 95–98% relative humidity, with good air circulation.
