Stock 'Iron Pastel Mix'
Matthiola incana
Premium, florist quality stock in the prettiest pastel hues. Compared to Katz, Iron is slightly later to flower and stockier (pun intended), meaning it's stems are thicker flowers are more compact with tightly-spaced florets. It makes the best floral pillows at the base of arrangements or bridal bouquets.
My all-time favorite for design due to it's versatility, fragrance, and soft colors. Clusters of frilly flowers add a romantic touch, while sturdy stems make it perfect for both bridal and market bouquets. The flower clusters also serve as an ideal supporting pillow in arrangements. Bonus: they hold up well out of water, and the florets work beautifully with floral glue for wearables.
Selectable for doubles and 55% double without selection. NOTE: Do NOT pinch. This variety produces one flowering stem per plant.
Flowers are also edible and are great for garnishes and cake decorating (wedding cakes).

How to Grow
Sow indoors 5–6 weeks before transplanting out. Stock is a cool-weather crop and does best in spring or fall. Do not pinch. Selection for doubles is possible. See Johnny's Production Guide.
Harvest & Vase Life
Harvest when 1/3 to 1/2 of florets on a stem are open. Remove woody portion to improve water uptake.
