Standard winter-hardy thyme. This classic culinary and medicinal herb, has been treasured for at least 3,000 years! If you're looking to elevate your kitchen, thyme is a must-have. It's a low-maintenance perennial that’s easy to grow from seed. Not much beats the satisfaction of snipping a few sprigs of hardy thyme to make a bouquet garni—a traditional French herb bundle used to flavor stocks, soups, sauces, and stews. Perennial, Zones 5–8 (but reliably perennializes in my own Zone 4).

How to Grow
Sow indoors 8–10 weeks before transplanting out. Cover lightly. Will become woody and needs to be divided or replaced after 3–4 years.
Harvest & Storage
Once established, harvest leaves before flowering begins. Leaves can be harvested 3–4 times per year, cut at ground level. Leaves may be used fresh or dried. To dry, cut bundles into 1/4–1/2" lengths. Dry on a screen surfaced out of direct sunlight in an area with good ventilation. Stir periodically.
